Ingredients

  • 1 cup cooked millet
  • 1 cup chopped vegetables (Green peas, broccoli florets, cabbage, carrots, corn, French beans, red peppers)
  • 1 tablespoon ghee
  • 1 onion finely chopped
  • 1 teaspoon each ginger & garlic finely chopped
  • 1 bay leaf
  • A pinch of asafoetida
  • 1teaspoon cumin seeds
  • Juice of one lemon
  • Salt & Pepper for seasoning
  • Roasted cashew for garnishing
  • Fresh & chopped coriander leaves

Millet and Vegetable Stir fry

Method

Step 1

Heat ghee in a pan, add bay leaf, cumin seeds, asafoetida & allow it to sputter. Add the ginger & garlic, sauté it for a minute & add chopped onions along with other vegetables, season it with salt & pepper.

Step 2

Stir-fry it over high flame & allow it to cook. Add the millet & mix it well, squeeze fresh lime over it.
