Quinoa& Millet Salad
- 1 cup cooked quinoa & millet blend
- 1 cup cooked vegetables (broccoli & zucchini)
- ½ cup boiled chickpeas & sweet corn
- 1 tbsp. chopped celery
- ½ cup finely sliced red radish & cucumber
- 1 chopped avocado
- 10-12 sliced cherry tomatoes for garnish
- 1tbsp black & golden raisins for garnish
- Roasted walnuts & almond flakes for garnish
- Dressing – 3 tbsp. olive oil, juice of one lemon, 1½ tsp coconut sugar, salt & pepper
In a large bowl mix the grains along with veggies & legumes, add the dressing & mix it well.
Garnish it with cherry tomatoes, raisins & nuts.
