Ingredients

  • 1 cup cooked quinoa & millet blend
  • 1 cup cooked vegetables (broccoli & zucchini)
  • ½ cup boiled chickpeas & sweet corn
  • 1 tbsp. chopped celery
  • ½ cup finely sliced red radish & cucumber
  • 1 chopped avocado
  • 10-12 sliced cherry tomatoes for garnish
  • 1tbsp black & golden raisins for garnish
  • Roasted walnuts & almond flakes for garnish
  • Dressing – 3 tbsp. olive oil, juice of one lemon, 1½ tsp coconut sugar, salt & pepper

Step 1

In a large bowl mix the grains along with veggies & legumes, add the dressing & mix it well.

Step 2

Garnish it with cherry tomatoes, raisins & nuts.
